Life was anything but easy growing up on Cutler Street during the early 1940s. At the time, the bustling street in Schenectady’s Mont Pleasant neighborhood was crowded with low-income and immigrant families. Poverty was common, and there was seldom time to do anything but work.

October cooking classes

Saratoga Restaurant Equipment Sales has announced five cooking classes being held during October in the business’ test kitchen. All classes last two hours.

Oct. 8, 6 p.m., “A is for Apple,” Jim DeWaard, member of the Glens Falls Chapter of the American Culinary Federation. Apple-walnut spinach salad, pork schnitzel, apple-pear-raisin chutney, apple brownies, apple cider cream. $50.

Oct. 15, 6 p.m., “3 Great Pasta Dishes II,” Richard Ferrugio, Saratoga Rose Inn. Linguine with caramelized zucchini; shrimp and scallops; farfalle with peas, onions, pancetta and Romano cheese; egg -drop gemelli, sweet sausage ragu with red wine and pine nuts. $65.

Oct. 18, 10 a.m., “31 Minute Meals,” John Winnek. Gourmet macaroni and cheese, wild mushrooms, fontina cheese and fresh herbs; side salad of autumn pears, candied walnuts , Gorgonzola and port-balsamic vinaigrette. Also, pan-seared pork tenderloin, maple whipped sweet potatoes, dried cherry Melba sauce, wilted Swiss chard. $50.

Oct. 22, 6 p.m., “Breakfast or Lunch? Let’s Do Brunch” Amy Kantor, Omelette King Catering. Omelettes, strata (baked French toast bread soaked in egg mixture with veggies, cheese and sausage), home fries, banana-stuffed French toast. $30.

Oct. 29, 6 p.m., “Pysco Knife Skills III,” Chris Scarano, “Your Chef at Home.” Basic knife-skills course includes dices, roll cut, chiffonade and julienne. Knife sharpening, cleaning and storage, purchasing the perfect knife, mandolin use, presentations and garnishes. Bring your own knives to sharpen if desired. $30.

The company is also looking looking to add more local chefs to its roster of teachers for its monthly cooking classes.
