Stuffed with love

Margaret Cosentino of Amsterdam submitted a stuffed pepper recipe for Fabulous Favorites that was handed down from her mother-in-law, Josephine Cosentino.
Unlike many recipes for stuffed peppers, Grandma Cosentino’s instructions do not include rice. “What you have to do is get the right ingredients,” Margaret Cosentino said. “I’ve been using Mastroianni bread right now. American bread doesn’t have the substance Italian bread does. It’s too light for stuffed peppers.”
Josephine Cosentino came to the United States in 1930. A natural cook, she never used recipes, but would lay out all her ingredients and explain how a dish was made.
